Hello,  after working sometimes with some song analysis i'm wondering,  you can't use a typical scale like pentatonic or something in some progression that my have a V/V or som chords that have notes that aren't on the scale,  so you have to figure out new scales that contain the notes of the new chords and the old ones or what?

Not neccesarily. It depends on the sound and effect you want to get. There can be chromatic notes in the same way there can be chromatic chords, but of course they ought not to be always gratuitous.
